1. Wash the tomatoes and cut into slices, removing the base of the stem. Wash the peaches and cut them into halves, remove the stones and cut the peach halves into wedges. Rinse the rocket salad and shake dry, remove thick stems and pluck the leaves into large pieces. Rinse the basil and shake dry, pluck off the leaves and chop into large pieces. Mix the tomatoes, peaches and rocket salad and arrange on plates and sprinkle with basil.
2. Cut the chilli pepper in half lengthwise and remove the seeds, wash the halves and chop into fine bits. Drain the sun-dried tomatoes and chop into fine pieces. Rinse the thyme and shake dry, pluck off the leaves and also chop into fine pieces. Peel the garlic and cut in half, rub the a small bowl with the cut surfaces, then finely chop the garlic halves. Mix the honey, mustard, vinegar and oil in the small bowl. Stir in the chilli pepper, dried tomatoes and half of the thyme. Sprinkle some salt and pepper over the salad.
3. Cut the slices of bread into cubes approx. 1 cm in size. Melt the butter in a pan, add the garlic, cubed bread and pine nuts and roast until golden brown while stirring, add the remaining thyme at the end. Sprinkle the crouton mix over the salad and serve immediately.
