1. Peel the celeriac, carrots, onions, garlic and potatoes and chop into coarse cubes.
2. Sauté onions and garlic with the rosemary in butter for 5 minutes until transparent. Add the potatoes, carrots, sage and celeriac and sauté for 5 minutes. Add white wine, bring to a boil, pour in the vegetable stock and cook for 20 minutes with the lid on until tender.
3. Cut the chorizo into small cubes and fry in oil for 5 minutes until crispy. Drain on some kitchen paper. Finely chop the parsley leaves
4. Remove the rosemary and sage, purée the soup with a hand blender, add Kühne Ready-To-Use Horseradish, season with salt and pepper and serve with chorizo and parsley as a garnish.
*Tip: If you cannot find chorizo, simply use bacon strips or diced ham.*
