1. Slice the courgette on a mandolin slicer in to thick slices and cook on a lightly oiled grill or non-stick frying pan on both sides. Keep the courgette warm.
2. Grill the prawns with pressed garlic clove and 1 sprig of thyme on both sides for about 3 minutes. Season with salt and pepper and keep warm.
3. Mix a few thyme leaves, chopped parsley and chopped ginger with the dressing.
4. Serve courgettes, tomato halves, prawns and frisée lettuce on a plate, drizzle with the dressing and serve with toasted whole wheat bread.
