Thinly slice salmon lengthwise into 1/8 cubes. Place salmon in a medium bowl.
Slice cornichons in half. Peeled, halved, seeded and diced papaya. Trimmed and sliced diagonally green onions. And mince chili and shallots. Mix all ingredients with the salmon.
Season tartare to taste with salt and pepper.
