Polish Pickle Soup

Ingredients for 4 persons

  • 1 jar Kühne Pickled Gherkins
  • 1 Onion
  • 6 pork ribs
  • 5 Potatoes
  • 3 Carrots
  • 1 ltr Vegetable stock
  • some Butter
  • Pepper
  • 4 TBSP Cream

Preparation

Sauté onions in butter in a large pot until translucent. Deglaze with 1 l of water and add the pork ribs. Skim off any foam with a ladle. Simmer for 15 minutes.

Add 1 liter of stock powder. Peel and add potatoes and carrots. Cook for about 30 minutes until the vegetables are tender.

Grate the cucumbers into fine strips using a vegetable grater. Only add them once the vegetables are soft, as cucumber juice can extend cooking time. Cook for 10 more minutes.

Season the stew with pepper, and salt if needed, plus some cucumber juice. In Poland, cream is sometimes stirred in just before serving, depending on taste.
