Preparation
For the fried pickles, drain the Kühne burger gherkins, pat dry with kitchen paper.
For the fried pickles, drain the Kühne burger gherkins, pat dry with kitchen paper.
Heat oil in a deep fryer or a pan. Fry the coated gherkins in the hot oil until golden brown and crispy.
For the herb mayonnaise, wash and dry the herbs, then finely chop them. Place the egg yolk, water, mustard, and lemon juice into a tall mixing container.
Blend everything with a hand blender on the highest setting. Keep the blender at the bottom until the mixture emulsifies, then slowly add the oil while gradually raising the blender until the mayonnaise becomes thick and creamy.
Season the mayonnaise with salt and pepper, then fold in the chopped herbs.
Serve the fried pickles with the herb mayonnaise.
