For the dough:

  • 62.5 g Fresh curd cheese
  • 2 TBSP Milk
  • 1 Egg
  • 2 TBSP Oil
  • 0.5 TSP Salt
  • 150 g Flour
  • 0.5 Pack Baking soda
  • Fat for the form

Preheat the oven to 200 °C. Mix quark, milk, egg, oil, salt, flour, and baking powder into a smooth dough. Line the base and sides of a greased 28 cm springform or quiche tin with the dough.

Drain the Kühne sauerkraut and sauté in heated oil. Peel, quarter, and core the apples, then dice apples and cooked ham. Add to the sauerkraut and cook covered for about 20 minutes. Allow to cool slightly.

Mix sour cream, eggs, and flour, then stir into the sauerkraut mixture. Season with salt, pepper, and sugar. Spread the filling on the dough and bake for 40–50 minutes until golden brown (conventional oven: 200 °C / gas mark 4; fan oven: 180 °C).
